A Healthy Shamrock Shake: Avacado and Coconut Cream Smoothie

Make it go away!

I love festive holiday themed food. It makes all happy and warm and fuzzy. Because I love kitschy holiday food I have tried, ever so hard, to love McDonald's Shamrock Cafe. But alas, I cannot. I'm sorry, but am I the only one who thinks these things taste like toothpaste? My childhood memories have erased this very important fact, so when I got my first Shamrock Shake in years, I was extremely excited. That last approximately one sip, then I pulled over and dumped the rest on the side of the road.

Gross.

Thus, I offer you a somewhat healthier alternative. I say "somewhat" because although all the ingredients are relatively healthy, this recipe calls for coconut cream, which is pretty high in calories. I have this smoothie in the morning because it will get me going though most of the day. For all the coconut in this, it's actually not very coconut tasting at all. It's very mild. I'm thinking of subbing out the coconut cream and trying actual shredded coconut next time, which will probably increase the coconut flavor, as well as the sweetness. It also is a beautiful lovely shade of pale green, which doesn't show up in my photos, so it satisfies my need for holiday themed food.



Your ingredients:
  • 1/2 Avocado
  • 1 C of Coconutmilk
  • 1/2 of a Frozen Banana
  • 2 Large Spoonfuls of Fat Free Vanilla Greek Yogurt
  • A Tiny Drizzle of Honey
Throw it all in  blender until smooth and you're good to go.

If you're feeling extra festive you can drink it out of Guinness Mug like Moi.
