I am not usually a banana bread person. I hardly ever make it. I think this might have been my second time ever, and really the only reason I made it is because we went to Sam's Club a few weeks ago and got 2lbs of bananas for $1.50 (awesome). Except then I only ate 2 bananas before they started getting super ripe. So I threw them in the fridge and spent a week saying I was going to make bread.
After a while they reached a do or die state of blackenedness so I had to get off my butt and actually bake the bread. I used a modified version of this recipe...it took a couple loaves to get it right. The crust is delicious but extra dark, and I'm wondering if this is because of the brown sugar? I'm not sure, but either way it tasted fantastic...and in no way healthy. The original recipe said bake at 350 for 1 hour but mine was nowhere close to done after an hour and the crust was already super dark, so I did my next 2 loaves at 300 and they took about 75 minutes to cook. You could literally smell the butter as it cooked. Tony and I ate an entire life by ourselves in just a couple days.
Here's the recipe - it's super tasty
Makes 4 loaves, obviously you can cut the recipe in half for 2 loaves
Preheat oven to 300 degrees
Ingredients:
- 4 cups all-purpose flour
- 2 teaspoon salt
- 1 tablespoon and 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- 2 cup butter or margarine
- 3 cups white sugar
- 1 cup brown sugar, packed
- 4 cups mashed overripe bananas
- 8 eggs, beaten
- 2 cup chopped walnuts or pecans
Directions:
- Cream butter and sugar.
- Add eggs one at a time, beating in between each addition.
- Mix in mashed banana and vanilla.
- In a separate bowl mix dry ingredients. Add to butter, sugar, and egg mixture in 3 parts, being sure to scrape the sides down.
- Mix in nuts.
- Divide into four 9x5 and bake at 300 degrees for approximately 1 hour and 15 minutes, checking in the last 15 minutes to make sure the bread is done by inserting a toothpick or knife into the center of the bread and baking until it comes out of the bread cleanly.
