I came across this recipe for 3 Ingredient Pumpkin Chocolate Chip Muffins on Mix and March Mama - the recipe was so easy, how could I not try it out?
Ingredients
- 1 15oz. Can of Pumpkin
- 1 Box of Spice Cake Mix
- 1 Cup of Chocolate Chips
- Preheat oven to 350 degrees
- Mix it all together, pour into cupcake liners, and back for about 15 minutes
A few tips - The batter itself is thick and mind did not rise at all, so you might want to keep that in mind. I'm thinking about making this again but adding sliced apples instead of chocolate chips, yum! I figure, no oil, no eggs, and heck, it even has fruit in it? I'm definitely being healthy. If you're not into the muffins, this would also make a great quick bread - just remember to grease your pan.
Mix and Match Mama suggests that you freeze them immediately, and then heat them up one at a time in the morning - 30 seconds in the microwave and you're good to go. Now, if only I had some cream cheese to go with these...

We just made these as cookies. So yummy. But we had to bake them for 21 minutes or so. They are still super moist and chewy.
